Bute seaweed tickles tastebuds at grand New York dinner

SEAWEED from Bute appeared on the menu at a gathering of some of the world’s top chefs in New York this week.

Scotland’s top chef Andrew Fairlie received special permission from the US Department of Agriculture to fly to the Relais & Chateaux ‘Diner des Grands Chefs’ event on Monday with produce from local firm Just Seaweed.

Monday’s event was the second major recognition for seaweed from Bute in recent days: last week Colin Buchan, head chef at Gordon Ramsay’s York and Albany restaurant in London, used Just Seaweed spiral wrack on his appearance on the BBC’s Great British Menu series, still available to view online via the BBC iPlayer.

Just Seaweed is owned and run by Bute resident Iain McKellar, who harvests several different types of the sea vegetablefrom designated areas around the island.
